Ingredients:
2 cups fresh strawberries, hulled and sliced
1 cup granulated sugar
1 vanilla bean, split and seeds scraped
2 cups heavy cream
1 cup whole milk
6 large egg yolks
Instructions:
1. Make the Strawberry Mixture: In a saucepan, combine strawberries, sugar, and vanilla bean seeds. Cook over medium heat until the strawberries soften and the sugar dissolves. Remove from heat and let cool.
2. Prepare the Custard: Heat heavy cream and milk in another saucepan until it simmers. Remove from heat. In a bowl, whisk egg yolks, then slowly pour the hot cream mixture into the yolks, whisking constantly.
3. Thicken the Custard: Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
4. Cool the Custard: Strain the custard into a bowl and let cool. Refrigerate until cold.
5. Churn the Ice Cream: Churn the custard in an ice cream maker according to the manufacturer’s instructions.
6. Add Strawberries: In the last few minutes of churning, add the strawberry mixture.
7. Freeze: Transfer the ice cream to a container and freeze until firm.
