Simple and Creamy Strawberry Vanilla Ice Cream

Ingredients:

  • 2 cups fresh strawberries, sliced
  • 1 cup sugar
  • 1 vanilla bean (or 1 teaspoon vanilla extract)
  • 2 cups heavy cream
  • 1 cup whole milk
  • 6 egg yolks

Instructions:

  1. Prepare the Strawberries:
    First, place the strawberries, sugar, and vanilla seeds (or extract) in a saucepan. Then, cook over medium heat until the strawberries soften and the sugar melts. After that, remove the mixture from the heat and let it cool.
  2. Heat the Cream and Milk:
    Next, in another saucepan, heat the heavy cream and milk over medium heat. Make sure to watch it carefully and remove it from the heat just before it starts boiling.
  3. Mix with Egg Yolks:
    In a bowl, whisk the egg yolks. Then, slowly add the warm cream mixture, stirring constantly so the eggs don’t scramble.
  4. Thicken the Mixture:
    After mixing, pour the mixture back into the saucepan. Stir it over low heat until it thickens slightly. You’ll know it’s ready when it coats the back of a spoon.
  5. Cool the Base:
    Once thickened, strain the mixture into a clean bowl. Then, allow it to cool to room temperature. Afterward, refrigerate it for a few hours until it’s completely cold.
  6. Churn the Ice Cream:
    After chilling, pour the mixture into your ice cream maker and follow the machine’s instructions. During the last few minutes of churning, add the strawberry mixture.
  7. Freeze and Enjoy:
    Finally, transfer the churned ice cream into a container. Freeze it for a few hours until firm. Then, scoop and enjoy this creamy, refreshing treat!
